I’ve recently discovered that I’m totally fabulous at making biscuits, so I’m going to share it with you all! Aren’t I great?!

These will all be incredibly simple to make (otherwise I’d blow up the kitchen) so why dont you give it a go? Plus, it’s an excuse to get covered in flour, which is always fun! Yay for mess!

Hazelnut Cookies

Ingredients

75g (3oz) Hazelnuts
75g (3oz) Self-Raising Flour
75g (3oz) Caster Sugar
75g (3oz) Butter
1 Egg Yolk, lightly beaten

First of all, switch your oven on. Gas Mark 4/180°C/350°F and put your baking tray in there

Chuck the hazelnuts in a food processor and make sure they’re chopped finely.

Add the flour, sugar and butter and process it until the mixture resembles breadcrumbs

Add the egg yolk and mix briefly just so that it binds the mixture together

Take out the mixture and put it on a plate. Now here comes the fun part…..

Squish everything together and keep squeezing and squashing until everything is in a big lump

Now roll the mixture so it looks like a log (heheh…log…heheheh). You can sprinkle some flour onto the plate/cookie dough if it’s *really* squishy and sticking to the plate

Once you have a nice log shape, get a knife and slice off cookies sized pieces from the end until you have approximately 12 pieces of cookie dough

Take out your baking tray and put the cookies on, but space them out well because they *will* expand!

Put them on the top shelf and leave for approximately 8-10 minutes

Take them out once the edges start to go brown. They may feel squishy in the middle and not look cooked, but once they start to cool, they’ll harden. If you cook them for too long, the hazelnuts will taste quite bitter

Just leave them on the baking tray out of the oven to cool for around 10 minutes. Then they’ll be firm enough to move to a plate if you want to make more cookies or use the tray for something else.
